Projects

Here's what we've been working on...


Monday we celebrated Labor Day by making salsa. This is a picture of what we made minus 2 cups that we've already eaten. No, we didn't eat it all-by-ourselves, we had help. All the ingredients came from our garden minus the onions (which we tried to grow, but nothing came up), garlic, sugar, salt and vinegar. We hope to do one more batch before cold weather hits.

Here's the recipe if you want to try it out:

1 Gallon of blanched, peeled and chopped tomatoes
2 cups chopped jalopino
2 cups chopped green bell pepper
3 whole garlic cloves
2 cups chopped onion
1/4 cup sugar
1/4 cup salt
1/2 cup vinegar

Put all ingredients together and boil, then turn down to let it simmer until it looks like salsa. (We find that's about 3 hours.) Have jars hot and lids boiling. I like this recipe because as the salsa cools, the jars seal themselves. It's a pretty easy canning job.

This salsa is hot, if you want it to be less hot, put less jalopinos in and more green bell peppers. Have fun, let me know if you use it.


I've gotten ambitious for Thomas' birthday and decided to make him a homemade swing. Here's what I've got already. I found instructions on a really awesome blog. Just search for "how to build a tree swing" and this blog will come up if you're interested. I'll post more pics when I've got the finish product. I hope Thomas likes it.



Our last project doesn't have any pictures yet, but it is something we are working on. James' sister, Natalie, has got us (meaning the whole family) training to participate in the Wasatch Back Relay Race for next June. It is a relay race where teams made up of 12 members run from Logan to Park City. Each team member runs three legs made up of about 5-8 miles each. James and I have gotten into it and (with the help of our personal trainer Mckay) have gotten up to running 4 miles. We run pretty slow though, so now that we have gotten to 4 miles we're going to be working on our speed. Right now we're averaging about 11 min miles, it's our goal to be at 10. (Life is easier if you don't set really hard goals :) ) James and I have never been runners so we've been impressed with ourselves and these wonderful healthy bodies we've been given. The kids are into it too. They love going in the "race stroller" too. Wish us luck with our training!

Wow, good luck with the tree swing. I'm not sure I would be brave enough to take on a project like that! I bet Thomas will love it! Hope he has a very happy birthday!
